Mississippi Collins

I discovered Simon Difford's Mississippi Punch many years ago, and it proved to be an excellent antidote to hot summer nights.  The Mississippi Collins is a variant of Difford's Punch.  I swapped sparkling water for still, which along with the lemon juice and simple syrup, puts the drink in the category of Collins, headed up by the Tom Collins.  I designed this cocktail to be a sweet, refreshing drink where the Cognac rounds out the Bourbon flavor.  Peach bitters marry the Bourbon and lemon flavor, creating a complete experience eminently suitable to porch sipping.
