Mai Tai

The Mai Tai is one of the classic tiki drinks that represents the perfect balance of sweet, sour, and strong flavors. Victor Bergeron of Trader Vic’s fame certainly gets credit for coining the name, but he was no doubt inspired by a similar drink he was served at Bar La Florida by Constintino Very: the Golden Glove.  For BadCat Cocktail's version, I selected an aged decanter bitters to provide the flavor profile associated with the rum float often added to the drink in a bar setting. The house-made orgeat contains notes of orange and rose flower waters to more fully evoke the tiki experience. The rum and orange liqueur are tempered by the sweetness of orgeat, simple syrup, and the syrup from Maraschino cherries.
